OP, depends on what color... and how much you think it will affect your interview (or if you intend to tone it darker/more natural just before the interview). 

Medicine is still very much a conservative field. Particular at the med school interview stage, when they're trying to cut 3000 to 300, you don't want your "red flag" to be your hair color. I mean.. if you can blame the highlights on sun bleaching, I think you'll be fine. If you're going for frosted white tips though, maybe not. 

However, in the actual workforce, I think it doesn't matter thaaaat much. I work at a children's hospital. Silver blonde (previously pink, lavender, violet, silver... etc) Asian with facial piercings. No complaints. (I go back to a medium-ish brown before interviews though, I don't think adcom would appreciate unicorn hair very much)
