How much can the MCAT be improved?

I am currently in my junior year as a premed student and am wondering is there is a plateau on a person's MCAT score? I have heard stories of people completing all of the requirements, but the score they receive prevents them from getting an interview for a med school. Is it a test that can be learned, or is it mostly in favor natural test takers. Has anyone here had to take an extra year after graduating to improve a low Mcat score? Was it successful? Im really interested in  medicine so far I just want to make sure and have realistic idea if this is something I can pursue.
