Letters of Reference - Do they need to be sealed and sent by the referee?

I just met with one of my referees and I gave them an envelope with my address as well as the OMSAS address on it (by their request). Will they still accept it? Or do these letters have to be sealed with their own address on it?

You should have the referee's address as the sender and OMSAS as the receiver.

The referee has to send it. So generally, they should have their address on it. They are writing it, so its their letter, therefore they should be sending it, so the envelope should have their address on it as the sender's address.
