I didn't decide to write the MCAT until late-May last year, and dragged my feet booking (went on for the first time in June). At first there were absolutely no seats and I was kicking myself for not booking earlier. However, I had heard of a lot of people booking seats in July for the same year, so I kept checking a few times a day, and eventually a spot opened up on the test day that I wanted (mid-August, booked late June), and there were also plenty of earlier seats that briefly became available and then were snatched up. I think people cancel their bookings as the time nears either because they did better than they thought on their first attempt or they don't feel ready (or any number of other reasons). I would check about once an hour for at least the next week or so and see if anything shows up for September before resigning yourself to January and having to wait another full application cycle.
