As long as things on your end are on time (essays, transcripts, mcat) they will allow your refs to be a bit late. Don't quote me on this but U of A recieved my friend's last essay a month late. Im pretty sure it was sometime in February. But it wasn't laziness, the reference form/package from Manitoba got lost in the mail. Anyway, my interview wasnt revoked or anything!
